A quick, no-cook snack born from a traffic jam epiphany, these roll-ups combine creamy peanut butter and ripe bananas in a flour tortilla for a portable, balanced treat ready in just five minutes.

Ingredients

Scale
  • 1 large flour tortilla (1012 inches)
  • 1 ripe banana (yellow with brown spots)
  • 23 tablespoons creamy peanut butter
  • 1 teaspoon honey or maple syrup (optional, for sealing)
  • 1 teaspoon water (optional, for sealing)

Instructions

  1. Lay the large flour tortilla flat on a large plate or clean surface.
  2. Peel the banana and trim the ends if necessary so it fits within the tortilla’s width. Slice the banana in half lengthwise.
  3. Spread the creamy peanut butter evenly over the tortilla, leaving a half-inch border around the edges.
  4. Place the banana halves parallel to each other on the peanut butter, starting from the bottom edge.
  5. Starting at the bottom, lift the tortilla and roll it tightly over the banana, tucking the filling in as you go.
  6. Dab the top edge of the tortilla with a little water or honey to seal it, then press gently to secure.
  7. Let the roll sit for a minute to set, then slice into pinwheels or bite-sized pieces with a sharp knife.
  8. Serve immediately or chill for 10 minutes for easier slicing.

Notes

Use room temperature tortillas to prevent cracking. If the tortilla tears, patch it with a small piece of another tortilla. For a gluten-free version, use rice-based tortillas but handle carefully as they are more fragile. Chill the roll-up for 10 minutes before slicing for cleaner cuts.
