Best Beer Braised Bratwurst with Sweet Onions Recipe

Tender beer-braised bratwurst with sweet, jammy onions, perfect for game day or a cozy dinner. This easy recipe uses simple ingredients and a two-step cooking process for incredible flavor.

  • 4 fresh bratwurst links (about 1 pound total)
  • 3 large sweet onions (such as Vidalia or Walla Walla), sliced into 1/4-inch half-rings
  • 12 ounces beer (lager, pilsner, or amber ale)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon caraway seeds (optional)
  • 4 hoagie or bratwurst buns
  • Spicy brown mustard or Dijon mustard, for serving

Instructions

  1. Prep your onions and brats. Peel the 3 sweet onions and slice them into half-rings about 1/4-inch thick. Pat the 4 bratwurst links dry with a paper towel. Set everything aside.
  2. Brown the bratwurst. Place your large skillet or Dutch oven over medium-high heat and add 1 tablespoon olive oil and 1 tablespoon of the unsalted butter. Once the butter is melted and the oil is shimmering, carefully place the bratwurst links in the pan. Cook for about 3-4 minutes per side, until they’re deep golden brown all over. Transfer them to a plate and set aside.
  3. Cook the sweet onions. Reduce the heat to medium-low. Add the remaining 1 tablespoon of butter to the pan. Once it melts, add all the sliced onions and 1/2 teaspoon of salt. Stir everything with your wooden spoon, scraping up those browned bits from the bottom of the pan. Cook the onions for 8-10 minutes, stirring occasionally, until they’re soft, translucent, and starting to turn a light golden color.
  4. Add the beer and seasonings. Pour the 12 ounces of beer into the pan with the onions. Add the remaining 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of caraway seeds if you’re using them. Stir everything together gently.
  5. Return the brats to the pan. Nestle the browned bratwurst links back into the pan, pushing them down into the onion and beer mixture so they’re partially submerged.
  6. Braise until tender. Bring the liquid to a gentle simmer, then reduce the heat to low. Cover the pan with a lid and let it cook for 20-25 minutes. After about 15 minutes, use your tongs to flip the brats once so they cook evenly on both sides. The brats are ready when they’re cooked through and feel tender when you poke them with a fork.
  7. Toast the buns (optional). While the brats are braising, you can toast your 4 hoagie buns. Split them open and place them cut-side down in a dry skillet over medium heat for 1-2 minutes, until lightly golden. Or pop them under the broiler for 30 seconds.
  8. Assemble and serve. Place a bratwurst in each toasted bun. Use a slotted spoon to pile on a generous amount of the sweet, beer-braised onions. Drizzle a little of the remaining cooking liquid over the top if you like it extra juicy. Add a smear of spicy brown mustard and serve immediately.

Notes

Don’t skip browning the brats for deep flavor. Cook onions low and slow to avoid burning. Choose a lager or pilsner; avoid hoppy IPAs. Let brats rest 5 minutes after braising. For a beer-free version, substitute with low-sodium chicken broth plus 1 tablespoon apple cider vinegar.
