  • 1 and 1/2 cups (300g) granulated sugar
  • 3/4 cup (75g) unsweetened natural cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk
  • 1/3 cup (80ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot brewed coffee
  • 1 cup (225g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 2–3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Black gel food coloring
  • White chocolate chips, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a 24-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate bowl, whisk eggs, buttermilk, oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix on low speed until just combined. Do not overmix.
  5. Slowly pour in hot brewed coffee while mixing on low. The batter will be thin; mix until smooth.
  6. Divide batter evenly among liners, filling each about 2/3 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, beat softened butter until creamy. Add powdered sugar one cup at a time, alternating with heavy cream.
  10. Add vanilla and black food coloring, beating on high for 3 minutes until fluffy and dark.
  11. Pipe frosting onto cooled cupcakes and decorate with melted white chocolate to create cat ears, eyes, and whiskers.

Notes

The batter will be thin due to the hot coffee; this is normal and ensures a moist crumb. Do not overmix the batter. Ensure cupcakes are completely cool before frosting to prevent the frosting from melting. Use gel food coloring for a deep black color without thinning the frosting.
