  • 2 cans (15 ounces each) Great Northern or cannellini beans, drained and rinsed

  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon chili powder
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, drain and rinse the beans, and cut the cream cheese into cubes so it softens faster.
  2. Cook the chicken. Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Season the chicken breasts with ½ teaspoon salt and ¼ teaspoon pepper. Place them in the hot oil and cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature of 165°F). Remove the chicken to a plate and let it rest.
  3. Sauté the aromatics. Reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Toast the spices. Add the cumin, oregano, and chili powder to the pot. Stir constantly for about 30 seconds until fragrant.

  8. Add the cream cheese. Drop in the cubed cream cheese and stir until completely melted into the chili, about 2-3 minutes.
  9. Finish with heavy cream. Pour in the heavy cream and stir to combine. Let the chili simmer for another 5 minutes, stirring occasionally. Taste and adjust seasoning with more salt and pepper if needed.
