Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower and cut it into uniform, bite-sized florets. Pat them dry thoroughly with a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together the rice flour, cornstarch, garlic powder, smoked paprika, cayenne (if using), salt, and black pepper. Add the water and olive oil, then whisk until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the dried cauliflower florets to the bowl with the batter. Gently toss until every floret is evenly coated. Let them sit in the batter for 2-3 minutes.
  5. Using a fork or your fingers, lift each battered floret out of the bowl, letting any excess batter drip off. Place them on the prepared baking sheet in a single layer with space between each piece.
  6. Bake for 20 minutes on the middle rack. Do not open the oven door during this time.
