Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper.
  2. Bring a medium saucepan of water to a boil. Add 1 cup of raw pumpkin seeds and a generous pinch of salt. Boil for exactly 10 minutes.
  3. Drain the seeds in a colander and rinse briefly with cool water. Spread them out on a clean kitchen towel or paper towels and pat dry. Let them air-dry for 5 minutes.
  4. In a mixing bowl, combine 2 tablespoons of melted unsalted butter and 1 tablespoon of olive oil. Add the dried seeds and toss until evenly coated. If using garlic powder or cayenne, stir it into the butter-oil mixture first.
  5. Spread the coated seeds in a single layer on the prepared baking sheet. Sprinkle with 1 teaspoon of fine sea salt, tossing gently to distribute.
  6. Roast for 15 to 20 minutes, stirring halfway through. At the 10-minute mark, flip the seeds with a spatula. Watch closely during the last 5 minutes; they are done when deep golden brown and smell toasty.
  7. Remove from the oven and let the seeds cool completely on the pan. They will crisp up as they cool. Once cool, transfer to a bowl and finish with a sprinkle of flaky sea salt if desired.
