  • 2 pounds (900 g) boneless, skinless chicken breasts
  • 1 cup (240 ml) low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cups cooked rice (white, brown, or cauliflower)
  • 2 cups steamed broccoli florets
  • 1 cup shredded carrots
  • Optional toppings: shredded cheese, Greek yogurt, or sauce

Instructions

  1. Trim excess fat from chicken breasts and pat dry with paper towels.
  2. In a small bowl, mix garlic powder, onion powder, oregano, basil, salt, and pepper. Sprinkle evenly over both sides of chicken. Drizzle with olive oil and rub in gently.
  3. Place seasoned chicken in a single layer in a 5-6 quart crockpot. Pour chicken broth around the chicken (not directly over it).
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours, until internal temperature reaches 165°F (74°C) and chicken shreds easily.
  5. Remove chicken to a cutting board, let rest 5 minutes, then shred with two forks.
  6. Return shredded chicken to crockpot and stir into juices. Let sit 10 minutes.
  7. Cook rice according to package directions. Steam broccoli until tender-crisp (3-4 minutes in microwave with water).
  8. Assemble bowls: divide rice among containers, top with chicken, broccoli, and carrots. Add optional toppings if desired.
  9. Cool bowls completely (20-30 minutes) before sealing lids to prevent sogginess.
  10. Refrigerate for up to 4 days, or serve immediately.

Notes

For best results, don’t lift the lid while cooking. Chicken can be frozen in its juices for up to 3 months. Adjust seasoning to taste; start mild for kids. Use a meat thermometer to avoid overcooking.
