This Jiffy Corn Casserole with sharp cheddar and a buttery Ritz cracker topping is a creamy, savory twist on the classic. It’s quick, easy, and always a crowd-pleaser—even for self-proclaimed corn casserole haters.

  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • 1 cup (8 oz) sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup crushed Ritz crackers (about 10–12 crackers)
  • 2 tablespoons unsalted butter, melted (for topping)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh chives or parsley

Instructions

  1. Preheat your oven to 350°F (175°C). Move the rack to the middle position. Grease your 9×13 baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn in a colander and let it sit for a minute or two to remove excess liquid.
  3. In a large mixing bowl, combine the two boxes of Jiffy Corn Muffin Mix, the drained whole kernel corn, the cream-style corn, the sour cream, and the 1/2 cup of melted butter. Stir until just combined. A few lumps are fine.
  4. Fold in 1 cup of the shredded cheddar cheese. Reserve the remaining 1/2 cup for the top.
  5. Pour the batter into the prepared baking dish and spread into an even layer.
  6. In a small bowl, combine the crushed Ritz crackers with the 2 tablespoons of melted butter. Stir until the crumbs are evenly coated. Sprinkle this mixture evenly over the top of the casserole.
  7. Sprinkle the remaining 1/2 cup of shredded cheddar over the cracker topping.
  8. Bake for 40-45 minutes, until the edges are golden brown and bubbling, the center is set (jiggles slightly like a cheesecake), and a toothpick inserted into the center comes out mostly clean with a few moist crumbs. If the top is browning too quickly, tent loosely with foil.
  9. Let it rest for 10-15 minutes before serving.
  10. Garnish with fresh chives or parsley if desired.

Don’t overmix the batter—stir just until combined. Let ingredients come to room temperature for best results. For make-ahead, assemble the casserole (without topping) the night before, refrigerate, and add topping just before baking. Leftovers keep in the fridge for up to 4 days and can be frozen for up to 3 months.
