  • 2 cups whole milk

  • 6 cups cubed bread (day-old or lightly toasted)
  • 1 pound breakfast sausage (mild or sage, cooked and crumbled)
  • 2 cups shredded cheddar cheese
  • ¼ cup chopped green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 baking dish with butter or non-stick spray.
  2. If using raw sausage, cook it in a skillet over medium heat, breaking it apart, until browned and no longer pink (6-8 minutes). Drain on paper towels. If using pre-cooked sausage, slice into bite-sized pieces.
  3. Cube the bread into 1-inch pieces. If using fresh bread, toast on a baking sheet for 5 minutes while the oven preheats. Day-old bread does not need toasting.
  4. Spread the bread cubes evenly in the prepared dish. Sprinkle the cooked sausage over the top, followed by the shredded cheese and green onions. Do not stir.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until pale yellow and slightly frothy (about 1 minute).
  6. Slowly pour the egg mixture evenly over the bread and sausage layers. Gently press down on the bread with a fork to help it absorb the liquid. Let sit for 5 minutes at room temperature.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for another 15-20 minutes, until the top is golden brown and the center is set but slightly jiggly. A knife inserted in the center should come out clean.
  9. Let the casserole rest for 5-10 minutes before serving. This allows the eggs to set completely and makes slicing easier.

Notes

For best results, use day-old bread. Assemble the night before and refrigerate for even better flavor. Reserve ½ cup of cheese to sprinkle on top during the last 10 minutes of baking for a perfect golden crust. If the top browns too quickly, tent loosely with foil. Always grease the dish to prevent sticking.
