  • 2 cups shredded sharp cheddar cheese (shredded from a block)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream (full-fat)
  • 1 cup pico de gallo or salsa
  • 1 avocado, diced and tossed with lime juice
  • 1/2 cup pickled jalapeños
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced thin
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned (6-8 minutes). Drain excess fat. Add taco seasoning and 1/4 cup water. Stir and simmer for 2-3 minutes until thickened. Set aside.
  3. Warm the beans: In a small saucepan over medium heat, add the drained black beans with a splash of water. Warm through for about 3 minutes, then mash lightly with a fork.
  4. Layer the first round of chips: Spread half the tortilla chips in an even layer on a lined baking sheet.
  5. Add the first layer of toppings: Spoon half the seasoned beef over the chips. Dollop half the warm beans over the beef. Sprinkle half the shredded cheddar and Monterey Jack cheese on top.
  6. Build the second layer: Add the remaining chips on top. Repeat with the remaining beef, beans, and cheese.
