  • 1/4 cup mayonnaise
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large round loaf of bread (sourdough or rustic Italian, about 89 inches wide)
  • 2 tablespoons olive oil
  • 1/4 cup shredded mozzarella cheese (for the web design)
  • 1 tablespoon sour cream (for the white web lines)
  • 1 small plastic spider or olive spider decoration (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bread bowl: Using a serrated knife, cut a circle about 2 inches from the edge of the top of the bread loaf. Remove the top ‘lid’ and set it aside. Gently pull out the soft bread inside, leaving about a 1-inch thick wall all around. Tear or cut the removed bread into bite-sized cubes.
  3. Squeeze the spinach: Wrap the thawed frozen spinach in a clean kitchen towel or paper towels and squeeze until barely any water comes out.
  4. Mix the dip base: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes.
  5. Add the flavor: Fold in the squeezed spinach, 1 cup shredded mozzarella, Parmesan, minced garlic, onion powder, black pepper, salt, and red pepper flakes (if using). Mix until evenly distributed.
  6. Fill the bread bowl: Spoon the spinach dip mixture into the hollowed-out bread loaf, mounding it slightly on top. Place the bread bowl on a baking sheet.
  7. Bake the dip: Place the filled bread bowl and the bread cubes (on a separate baking sheet) in the oven. Bake for 20 minutes. If the top is browning too quickly, tent loosely with foil.
  8. Create the spiderweb: Remove the bread bowl from the oven. Sprinkle the extra 1/4 cup mozzarella in a thin, even layer over the top of the dip. Return to the oven for 5 more minutes, until the cheese is melted and slightly golden. Meanwhile, put the 1 tablespoon sour cream into a small piping bag or a zip-top bag with a tiny corner snipped off.
  9. Draw the web: Once the dip is out of the oven, immediately pipe concentric circles of sour cream on top of the melted cheese. Start with a small circle in the center, then larger circles around it. Use a toothpick or the tip of a knife to drag lines from the center outward, creating the classic spiderweb pattern. Wipe the toothpick clean between each line.
  10. Add the spider: Place your plastic spider or olive spider on top of the web. Serve immediately with the toasted bread cubes and any extra dippers.

Notes

Squeeze the spinach thoroughly to avoid a watery dip. Use room temperature cream cheese for a smooth texture. The dip can be assembled up to 24 hours in advance; add 10 minutes to baking time if starting from cold. For a gluten-free option, bake the dip in a dish and serve with gluten-free dippers.
