  • ¾ cup granulated sugar, divided
  • 2 teaspoons ground cinnamon, divided
  • ½ cup (1 stick) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • ½ cup buttermilk, at room temperature
  • 1½ cups all-purpose flour, spooned and leveled
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup powdered sugar, sifted if lumpy
  • 23 tablespoons milk (whole milk preferred)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the long sides. Spray exposed ends with nonstick spray.
  2. In a small bowl, combine ¼ cup granulated sugar and 1 teaspoon cinnamon. Add diced apples and toss until coated. Set aside.
  3. In a large bowl, whisk together melted butter and remaining ½ cup sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla and buttermilk.
  4. In a separate bowl, whisk together flour, baking powder, salt, and remaining 1 teaspoon cinnamon.
  5. Add dry ingredients to wet mixture. Fold gently with a rubber spatula until just combined (a few streaks of flour are okay).
  6. Pour half the batter into prepared pan. Spread evenly. Scatter half the cinnamon-sugar apples over batter. Pour remaining batter on top, spread gently, and finish with remaining apples. Press apples down slightly.
  7. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly (around 40 minutes), tent loosely with foil.
  8. Cool in pan for 15 minutes. Use parchment overhang to lift onto a cooling rack. Cool completely before glazing (about 1 hour).
  9. For glaze: In a small bowl, whisk together powdered sugar and 2 tablespoons milk. Add remaining tablespoon milk if needed for a drizzle-able consistency (thick but pourable).
  10. Drizzle glaze over cooled bread. Let set for 10 minutes before slicing with a serrated knife.

For best texture, use firm apples like Honeycrisp or Granny Smith. Room temperature ingredients prevent butter from clumping. Cool bread completely before glazing to avoid melted glaze. Store in airtight container at room temperature for up to 3 days, or freeze unglazed for up to 3 months.
