Cozy Caramel Apple Sangria – Easy Fall Drink Recipe

This warm, slow-cooked sangria combines dry white wine with caramel, apple cider, and fall spices for a cozy drink that’s perfect for chilly evenings. It’s quick to prepare and sure to impress at any gathering.

  • 1/2 cup caramel sauce
  • 1/4 cup apple brandy (or bourbon)
  • 2 medium Honeycrisp apples, cored and thinly sliced
  • 1/2 cup apple cider
  • 2 cinnamon sticks
  • 1 vanilla bean, split lengthwise (or 1 teaspoon vanilla extract)
  • 3 whole cloves
  • 1 star anise (optional)
  • 1/4 cup brown sugar
  • Pinch of sea salt
  • For garnish: additional apple slices, cinnamon sticks, and a drizzle of caramel

Instructions

  1. Prepare the apples: Core the Honeycrisp apples and slice them into thin rounds, about 1/4-inch thick. Leave the skin on.
  2. Combine the base ingredients: Pour the entire bottle of white wine into your slow cooker. Add the apple cider, apple brandy, and caramel sauce. Whisk gently until the caramel is mostly dissolved.
  3. Add the spices and sweetener: Drop in the cinnamon sticks, whole cloves, star anise (if using), and the split vanilla bean. Sprinkle in the brown sugar and the pinch of sea salt. Give everything a good stir.
  4. Add the apple slices: Gently lay the apple slices into the liquid, trying to submerge them as much as possible.
  5. Slow cook: Set your slow cooker to low and let it simmer for 2 to 3 hours. If you’re in a hurry, high for 1 hour works, but low and slow gives you a more rounded flavor.
  6. Taste and adjust: After 2 hours, give it a taste. If you want it sweeter, add another tablespoon of brown sugar or a drizzle more caramel. If you want more spice, let it go another 30 minutes.
  7. Serve: Ladle the warm sangria into mugs, making sure to include a few apple slices and a cinnamon stick in each serving. Drizzle a little extra caramel on top if desired.

Notes

Don’t boil the sangria; keep it on low to avoid harsh alcohol flavor. Use a dry white wine to balance the sweetness. Slice apples uniformly for even cooking. Taste as you go and adjust sweetness or spice. For a cleaner drink, strain through a fine-mesh sieve before serving. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
