Cozy Christmas Simmer Pot with Orange & Cloves

A simple, hands-off simmer pot that fills your home with the warm, spicy, sweet aroma of Christmas using oranges, cinnamon, cloves, and cranberries. It’s the cheapest holiday magic you’ll ever find.

Ingredients

  • 2 oranges, sliced into rounds
  • 4 cinnamon sticks
  • 2 tablespoons whole cloves
  • 1 cup fresh or frozen cranberries
  • 1 tablespoon whole allspice berries (optional)
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 8 cups water
  • 3–4 sprigs fresh rosemary (optional)
  • 1 tablespoon dried lavender buds (optional)
  • 1 apple, sliced (optional)

Instructions

  1. Wash the oranges thoroughly under warm water. Slice them into rounds about ¼-inch thick. If using an apple, slice it the same way.
  2. Measure out the cinnamon sticks, whole cloves, and allspice berries. If using a vanilla bean, slice it down the middle lengthwise to expose the seeds.
  3. Place the orange slices, cinnamon sticks, cloves, allspice berries, and cranberries in a medium to large saucepan or pot. Add any optional ingredients if desired.
  4. Pour in 8 cups of cold water, or enough to cover the ingredients by about an inch.
  5. Place the pot over medium-high heat and bring to a gentle boil. Once small bubbles appear, reduce the heat to low so that tiny bubbles rise steadily.
  6. Let the pot simmer for at least 30 minutes to fill your home with fragrance. Keep it going for hours by adding more water as needed, typically every 45 minutes to an hour.
  7. After about 4 hours, the flavors will fade. Either strain out the old ingredients and start fresh, or add a few new orange slices and a fresh cinnamon stick to revive it.

Notes

Don’t let the pot boil dry; set a timer every 30 minutes to check water level. Use a heat diffuser for even heat. Start early in the day for the best scent. Keep the lid on between checks. Avoid using non-stick pans; stainless steel or enameled pots are best.
