  • 2 boxes (3 oz each) Jello gelatin (berry blue and cherry red recommended)
  • 2 cups boiling water (divided)
  • 2 cups cold water (divided)
  • 1/4 cup star-shaped sprinkles (hard, nonpareil-style)
  • Whipped cream for topping (optional)
  • Small clear plastic cups (4 oz each)

Instructions

  1. Start with the first flavor: Pour one box of Jello into a medium bowl. Add 1 cup of boiling water and whisk for about 2 minutes until completely dissolved.
  2. Add 1 cup of cold water and stir. Let it sit for 5 minutes at room temperature until lukewarm.
  3. Sprinkle 2 tablespoons of star sprinkles into the lukewarm Jello and stir gently for about 10 seconds.
  4. Pour the mixture into clear cups, filling them about halfway. Place on a tray and refrigerate for about 45 minutes until partially set.
  5. While the first layer sets, repeat steps 1-3 with the second flavor and remaining sprinkles. Let it sit at room temperature.
  6. After 45 minutes, gently pour the second color on top of the first layer.
  7. Return cups to the fridge for at least 3 hours or overnight until fully set.
  8. Before serving, top with whipped cream and extra sprinkles if desired. Serve cold.

Notes

Add sprinkles when Jello is lukewarm (not hot) to keep them suspended. Use hard, nonpareil-style sprinkles; avoid soft ones. Make up to 3 days ahead and add whipped cream just before serving.
