These air fryer pumpkin seeds are coated in a warm cinnamon sugar mixture and cooked to crunchy perfection in just 20 minutes. Perfect for fall snacking, parties, or a cozy night in.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds, cleaned and dried
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Clean and dry the pumpkin seeds: Rinse seeds under cold water, removing any pulp. Spread on a towel and pat completely dry.
  2. Preheat the air fryer to 320°F (160°C) for about 3 minutes.
  3. Melt the butter in a small microwave-safe bowl or saucepan.
  4. In a medium mixing bowl, combine melted butter, sugar, cinnamon, and salt. Stir until it forms a thick paste. Add maple syrup if using.
  5. Add the dried pumpkin seeds to the bowl and toss until every seed is evenly coated.
  6. Spread the coated seeds in a single layer in the air fryer basket. Do not overcrowd.
  7. Air fry at 320°F (160°C) for 10-12 minutes, shaking the basket halfway through. Check at 8 minutes to avoid burning.
  8. Transfer seeds to a plate or baking sheet in a single layer and let cool completely for at least 10 minutes before serving.

Notes

Drying the seeds thoroughly is crucial for crunchiness. Do not overcrowd the air fryer basket. Let seeds cool completely for best texture. For a dairy-free version, substitute butter with coconut oil or plant-based butter.
