These adorable Frankenstein Guacamole Cups are the perfect blend of spooky and comforting. Made with creamy guacamole, black beans, corn, and tortilla chips, they’re a fun and delicious snack for Halloween or any cozy night in.

  • 3 ripe avocados
  • 1/4 cup finely diced red onion
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small clove garlic, minced (optional)
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen or canned corn, drained
  • 1/4 cup crumbled queso fresco or feta cheese (optional)
  • Small tortilla chips
  • Additional tortilla chips for serving
  • Small clear cups or shot glasses

Instructions

  1. Prep your ingredients: Finely dice the red onion, mince the jalapeño (remove seeds for less heat), and chop the cilantro. Drain and rinse the black beans, and drain the corn if using canned. Set aside in small bowls.
  2. Make the guacamole: Cut avocados in half, remove pits, and scoop flesh into a mixing bowl. Add lime juice and salt, then mash with a fork to desired consistency (chunky is good). Fold in diced onion, minced jalapeño, chopped cilantro, black pepper, and garlic if using. Taste and adjust salt or lime juice as needed.
  3. Assemble the cups: Spoon about 2 tablespoons of guacamole into each small cup. Smooth the top with the back of a spoon or small spatula to create a flat surface.
  4. Create Frankenstein’s hair: Use black beans to create a ‘hairline’ along the top of the guacamole. Press them in flat or stack slightly for texture.
  5. Add scars and bolts: Place two or three corn kernels in a line across the forehead or cheek for stitches/scars. For bolts, use two small black beans or one kernel of corn on each side of the neck.
  6. Make the face: Use a small piece of black bean for each eye (two tiny dots) and a small sliver of tortilla chip for the mouth. Arrange to create desired expression.
  7. Add ears (optional): Stick a small tortilla chip into each side of the guacamole cup to look like ears. Optionally, crumble queso fresco on top for ‘bandages’.
  8. Serve immediately: Arrange cups on a platter with extra tortilla chips on the side.

Notes

For best results, use ripe avocados that yield to gentle pressure. Add lime juice first to prevent browning. Assemble cups no more than 30 minutes before serving to keep guacamole green and chips crunchy. Store leftover guacamole in an airtight container with plastic wrap pressed onto the surface for up to 24 hours.
