  • 1 cup (240 ml) warm water (about 110°F)

  • ¼ cup baking soda
  • Coarse sea salt, for sprinkling
  • 1 large egg, beaten
  • 2 cups (8 ounces) sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • ½ cup (120 ml) beer (lager or pale ale)
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (about 110°F) with sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 1 cup of flour. Dough should be soft and slightly sticky.
  3. Knead the dough: Turn onto a lightly floured surface and knead for about 5 minutes until smooth and springs back when poked.
  4. Let it rise: Place dough in a lightly greased bowl, cover with a clean towel, and let rise in a warm spot for about 30 minutes until doubled in size.
  5. Prepare the baking soda bath: Fill a large pot with about 8 cups of water and bring to a boil. Carefully add ¼ cup baking soda (it will bubble up). Reduce heat to a simmer.
  6. Shape the bites: Punch down the risen dough and roll into a 12-inch log. Cut into 1-inch pieces (about 30-35 bites).
  7. Boil the bites: Drop bites into simmering baking soda water in batches (8-10 at a time). Boil for 30 seconds, then transfer to a parchment-lined baking sheet.
  8. Brush and salt: Preheat oven to 425°F. Brush each bite with beaten egg wash and sprinkle generously with coarse sea salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown, rotating the sheet halfway through.
  10. Make the beer cheese dip: In a small saucepan, combine softened cream cheese, shredded cheddar, beer, Dijon mustard, garlic powder, and Worcestershire sauce. Heat over medium-low heat, stirring constantly, until melted and smooth (5-7 minutes). Season with salt and pepper.
  11. Serve immediately: Transfer warm pretzel bites to a platter with the beer cheese dip in a small bowl.
