Instructions

  1. Combine the dry ingredients: In a medium mixing bowl, add instant coffee granules, granulated sugar, ground ginger, ground cinnamon, ground nutmeg, and ground cloves. Stir with a fork to distribute spices evenly.
  2. Add the hot water: Pour 2 tablespoons of hot water (just off the boil) over the dry mixture. Stir gently until everything is dissolved, forming a dark, thin syrup.
  3. Whip the mixture: Using a hand mixer with the whisk attachment, beat on medium-high speed for 1 to 2 minutes until the mixture becomes thick, pale, and glossy, forming stiff peaks. If still runny, continue whipping up to 3 minutes.
  4. Warm the milk: While the foam whips, warm 1 cup of milk per serving in a small saucepan over medium-low heat until steaming (about 150°F), or microwave in a microwave-safe cup for 45-60 seconds, stirring halfway.
  5. Assemble the drink: Pour the warm milk into mugs, filling about three-quarters full. Dollop the gingerbread foam on top generously.

Notes
