Cozy Lazy Sunday Crockpot Chicken and Dumplings

A comforting and easy crockpot recipe for tender chicken thighs and fluffy dumplings, perfect for lazy Sundays and beginner cooks.

  • 2 lbs boneless, skinless chicken thighs
  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 tsp dried thyme or 1 tbsp fresh thyme leaves
  • 1 tsp dried parsley
  • Salt and freshly ground black pepper, to taste
  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup whole milk or dairy-free alternative
  • 2 tbsp unsalted butter, melted

Instructions

  1. Chop the onion, carrots, and celery. Trim excess fat from chicken thighs. Place the chicken at the bottom of the crockpot.
  2. Pour in chicken broth, then add onion, garlic, carrots, celery, thyme, parsley, salt, and pepper. Stir gently to distribute but don’t dislodge the chicken much. Cover and set the crockpot to LOW for 5 hours or HIGH for 3 hours.
  3. In a medium bowl, whisk flour, baking powder, and salt. Stir in milk and melted butter until just combined. The batter should be thick but spoonable. Avoid overmixing for tender dumplings.
  4. After the chicken has cooked and is tender, use two forks to shred the chicken directly in the crockpot. Drop spoonfuls of dumpling batter evenly over the surface (don’t stir them in). Cover and cook on HIGH for 45-60 minutes until dumplings are puffed and cooked through.
  5. Check dumplings by poking with a toothpick—it should come out clean. If not, cook another 10-15 minutes. Taste broth and adjust seasoning. Serve warm with fresh parsley or chives if desired.

Notes

Use chicken thighs for juicier meat; if using breasts, reduce cooking time. Drop dumpling batter on top without stirring to keep dumplings fluffy. If broth is thin after cooking, thicken with cornstarch slurry. For gluten-free, use a 1-to-1 gluten-free flour blend and gluten-free baking powder. For dairy-free, substitute milk with coconut or almond milk and butter with coconut oil or dairy-free margarine.
