Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8 or 9-inch cake pan with butter and line the bottom with parchment paper. Set aside.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the softened butter until creamy using a mixer. Add eggs one at a time, beating well after each addition.
  4. Add milk and vanilla extract to the butter and egg mixture. Mix until just combined.
  5. Gradually add the dry ingredients to the wet mixture in three additions, folding gently with a rubber spatula until just combined. A few lumps are okay.
  6. Pour the thick batter evenly into the prepared pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter. Rotate halfway if oven is uneven.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  9. If the cake has cracks or uneven surfaces, spread a generous layer of whipped cream or frosting over the top and decorate with fresh berries or sliced fruit.
