  • 1 cup old-fashioned rolled oats (90g)
  • 3/4 cup all-purpose flour (95g)
  • 1/2 cup light brown sugar, packed (100g)
  • 1/4 cup granulated sugar (50g)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, cold and cut into small cubes (113g, 1 stick)
  • 1/2 cup chopped pecans (60g), optional
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 350°F (175°C) and position a rack in the center. Place a baking sheet on the lower rack to catch any drips.
  2. Toast the oats and pecans: Spread the rolled oats and chopped pecans on a separate baking sheet and toast for 5-7 minutes, stirring once halfway through, until fragrant and lightly golden. Set aside to cool.
  3. Prepare the apples: Peel, core, and slice the apples into 1/4-inch thick slices. Place in a large mixing bowl.
  4. Season the apples: Add granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and flour to the bowl with the apples. Toss until every slice is coated. Let sit for 5 minutes.
  5. Make the crumble topping: In a medium bowl, whisk together flour, both sugars, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the dry mixture until it looks like coarse meal with some pea-sized butter pieces remaining. Fold in the toasted oats and pecans.
  6. Layer the filling: Pour the seasoned apples into a greased 9×13-inch baking dish and spread into an even layer. Drizzle half of the salted caramel sauce (about 2-3 tablespoons) over the apples and gently swirl.
  7. Add the crumble: Sprinkle the oat crumble evenly over the apples. Do not press down.
  8. Bake: Place the dish on the baking sheet in the preheated oven. Bake for 40-45 minutes, until the filling is bubbly around the edges and the topping is deep golden brown. If the topping browns too quickly after 30 minutes, tent loosely with foil.
  9. Add the final caramel drizzle: Remove from the oven and let cool on a wire rack for 10 minutes. Warm the remaining caramel sauce slightly, then drizzle over the top. Sprinkle with flaky sea salt.
  10. Rest before serving: Let sit for at least 15 minutes (30 is ideal) before serving to allow the juices to thicken.
