Cozy Slow Cooker Lasagna Soup with Ricotta

A comforting, one-pot slow cooker soup that captures the flavors of lasagna without the hassle. Rich with ground beef, tomatoes, and creamy ricotta, this dish is perfect for meal prep and cold days.

  • 1 pound ground beef (80/20 fat content preferred)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 0.5 teaspoon black pepper (or to taste)
  • 28-ounce can crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef broth (low-sodium)
  • 1 cup water
  • 1 bay leaf
  • 8–10 lasagna noodles, broken into pieces
  • 15-ounce container ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking into crumbles (5-7 minutes). Drain excess fat if desired.
  2. Add diced onion to the skillet and cook for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add tomato paste to the skillet and stir into the meat mixture for 1 minute.
  5. Pour in crushed tomatoes, beef broth, Italian seasoning, oregano, salt, and pepper. Stir to combine and taste for seasoning.
  6. Transfer the meat and sauce mixture into a 6-quart slow cooker insert.
  7. Add the bay leaf and broken lasagna noodles to the slow cooker.
  8. Pour in water and stir to ensure noodles are submerged.
  9. Cover and cook on high for 3-4 hours or low for 6-7 hours, until noodles are tender.
  10. About 15 minutes before serving, stir in ricotta cheese until melted and creamy. Do not boil.
  11. Remove bay leaf.
  12. Ladle soup into bowls and top with shredded mozzarella and grated parmesan.
  13. Garnish with fresh basil if desired and serve immediately.

Notes

Do not skip browning the meat for better flavor. Break noodles into bite-sized pieces for even cooking. If soup is too thick, add more broth. If too thin, cook uncovered for the last hour. Ricotta should be added at the end to prevent separation. For freezing, omit ricotta and mozzarella and add fresh cheese upon reheating.
