A fun and festive Halloween veggie tray that looks like a tiny graveyard scene, complete with bell pepper pumpkins, cucumber ghosts, and a creamy homemade ranch dip. Perfect for parties or a spooky snack.

  • 1 pound baby carrots
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 large cucumbers
  • 2 medium bell peppers (orange and red)
  • 1 cup cherry tomatoes
  • 4–5 celery stalks
  • 1/2 cup sliced black olives
  • 1 cup snow peas or sugar snap peas
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons dried buttermilk powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Make the ranch dip: In a medium bowl, combine sour cream, mayonnaise, dill, chives, parsley, garlic powder, onion powder, buttermilk powder, salt, pepper, and lemon juice. Whisk until smooth. Cover and refrigerate for at least 30 minutes.
  2. Prepare the vegetables: Wash and dry all vegetables. Slice cucumbers into 1/4-inch rounds and cut into ghost shapes using a cookie cutter or knife. Cut bell peppers into 1/2-inch rings and carve jack-o’-lantern faces. Cut celery into 3-inch pieces, then slice lengthwise into thin strips. Break broccoli and cauliflower into small florets.
  3. Assemble the spooky scene: Place the dip bowl in the center of a large platter. Arrange broccoli and cauliflower around the base. Add cucumber ghosts, bell pepper pumpkins, celery bones, cherry tomatoes, and black olives. Create olive spiders by arranging 4 slices in a cross with a whole olive in the center.
  4. Chill and serve: Cover the tray loosely with plastic wrap and refrigerate for 10 minutes. Serve immediately.

Notes

Keep vegetables cold and dry for best crunch. Dip can be made up to 3 days ahead. For vegan version, use plant-based sour cream and mayonnaise. For low-carb, skip carrots and cherry tomatoes.
