A luscious, creamy buffalo chicken dip speckled with tangy blue cheese crumbles, perfect for game day or casual snacking. This recipe balances spicy heat with cool, sharp blue cheese for a memorable appetizer.

Ingredients

Scale
  • 2 cups shredded cooked chicken (300g) – rotisserie chicken recommended
  • 8 oz cream cheese, softened (225g)
  • ½ cup buffalo wing sauce (120ml) – Frank’s RedHot recommended
  • ½ cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (110g)
  • ½ cup blue cheese crumbles (75g) – Maytag or good quality
  • 1 tsp minced garlic
  • 2 tbsp chopped green onions (optional)
  • ½ tsp freshly ground black pepper
  • Celery sticks and tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, soften the cream cheese using a hand mixer or sturdy spoon until smooth and creamy.
  3. Add shredded chicken, buffalo wing sauce, ranch dressing, minced garlic, shredded cheddar cheese, and black pepper. Mix well until evenly combined and spreadable.
  4. Transfer the mixture to an 8×8 inch baking dish and spread evenly with a spatula.
  5. Bake uncovered for 20-25 minutes until bubbling edges and a golden top appear. Tent with foil if edges brown too quickly.
  6. Remove from oven and gently fold in the blue cheese crumbles to preserve their texture and tang.
  7. Sprinkle chopped green onions on top if using.
  8. Serve warm with celery sticks and tortilla chips.
