  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 2 bay leaves
  • 8 oz cream cheese, softened and cubed
  • ½ cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • For garnish: fresh cilantro, shredded Monterey Jack cheese, sour cream, jalapeño slices, lime wedges, tortilla chips or crusty bread

Instructions

  1. Sauté the aromatics: Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant. Scrape into the crockpot.
  2. Build the base: Add the drained white beans, diced green chiles, cumin, oregano, salt, pepper, and bay leaves to the crockpot. Stir to combine. Place the chicken breasts on top and pour in the chicken broth. The chicken should be mostly submerged.
  3. Slow cook: Cover and cook on high for 3-4 hours or on low for 6-7 hours, until the chicken shreds easily with a fork and the beans are tender.
  4. Shred the chicken: Using two forks, shred the chicken directly in the crockpot. Remove the bay leaves. Stir to distribute the chicken evenly.
  5. Make it creamy: In a small bowl, whisk the cornstarch with 2 tablespoons cold water until smooth. Pour the slurry into the chili and stir. Add the softened cream cheese cubes and heavy cream. Stir gently until the cream cheese melts completely and the chili thickens.
  6. Finish and serve: Taste and adjust seasoning. Ladle into bowls and top with desired garnishes. Serve with tortilla chips or crusty bread.

Notes

For the creamiest texture, add the cream cheese and cream at the very end. Cube the cream cheese and let it come to room temperature before adding. If using frozen chicken, add an extra hour to the cooking time on low. To thicken a watery chili, let it simmer uncovered for 15-20 minutes after adding the cream cheese.
