A comforting, creamy white chicken chili made with just six ingredients in a slow cooker. This easy recipe uses shredded chicken, cannellini beans, green chiles, and cream cheese for a velvety texture and tangy flavor.

  • 2 large boneless, skinless chicken breasts
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chiles, including liquid
  • 2 cups low-sodium chicken broth
  • 1 packet dry onion soup mix
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 block (8 oz) full-fat cream cheese, cubed and softened

Instructions

  1. Place chicken breasts in the bottom of a 4- or 6-quart slow cooker.
  2. Add drained cannellini beans and the can of diced green chiles with their liquid to the pot.
  3. Pour in chicken broth and sprinkle dry onion soup mix, cumin, and garlic powder over the top.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken reaches 165°F.
  5. Remove chicken from pot and shred into bite-sized pieces using two forks.
  6. Use an immersion blender to blend about half of the soup mixture in the pot until smooth.
  7. Return shredded chicken to the pot and add cubed cream cheese.
  8. Stir gently until cream cheese is completely melted and incorporated.
  9. Season with salt and pepper to taste.
  10. Serve hot with desired toppings.

Notes

For best results, let cream cheese come to room temperature before adding to ensure smooth melting. Do not let the soup boil vigorously after adding cream cheese to prevent curdling. If using a standard blender, blend in batches and vent the lid to avoid steam burns. The chili thickens as it sits; add broth when reheating if needed.
