  • ½ teaspoon cinnamon (optional)
  • ½ cup toasted almonds or granola
  • A tiny pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Wash and quarter the plums, removing the pits.
  2. In a bowl, toss the plum quarters with 2 tablespoons honey, 1 tablespoon fresh lemon juice, ½ teaspoon cinnamon (if using), and a tiny pinch of salt until well coated.
  3. Arrange the plums cut-side up in an oven-safe baking dish or rimmed baking sheet.
  4. Roast for about 15-20 minutes until tender and honey has caramelized slightly. Avoid burning; plums should be soft but not mushy.
  5. While plums roast, mix Greek yogurt with 1 teaspoon vanilla extract until smooth and creamy. Adjust sweetness with a little honey if desired.
  6. Let roasted plums cool slightly to warm temperature to prevent yogurt from becoming runny.
  7. To assemble, spoon a layer of vanilla yogurt into serving glasses, then add roasted plums and sprinkle with toasted almonds or granola.
  8. Repeat layers until glasses are filled. Finish with a few plum pieces and a drizzle of honey on top.
  9. Serve immediately or chill for 15-20 minutes if preferred cooler.
