  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (jar-packed in oil preferred)
  • 3/4 cup chicken broth (low sodium)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and freshly ground black pepper. (5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Place chicken breasts in the pan, leaving space between them. Cook without moving for 5-6 minutes until golden brown on the underside. Flip and cook the other side for 4-5 minutes until cooked through (internal temperature 165°F). Remove chicken and tent with foil to rest. (10-12 minutes)
  3. Lower heat to medium and add butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook for 1 minute. (3 minutes)
  4. Pour in chicken broth, scraping up browned bits from the pan. Simmer for 2-3 minutes to reduce slightly. Stir in heavy cream, Parmesan cheese, dried Italian seasoning, and red pepper flakes if using. Stir continuously until sauce thickens, about 4-5 minutes. (8 minutes)
  5. Add fresh spinach to the sauce and stir gently until wilted, about 1-2 minutes. (2-3 minutes)
  6. Return chicken breasts to the skillet and spoon sauce over them. Warm together for 1-2 minutes. Adjust seasoning with salt and pepper if needed. (2 minutes)

Notes

If sauce gets too thick, add a splash of broth or cream to loosen. Let chicken rest after cooking to keep it juicy. Use a meat thermometer to ensure chicken reaches 165°F. For dairy-free, substitute heavy cream and butter with coconut cream and olive oil, and use a dairy-free Parmesan alternative or omit it.
