  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning (store-bought or homemade blend)
  • 8 ounces fettuccine or linguine pasta, broken in half
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 3 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Season the chicken pieces with Cajun seasoning until evenly coated.
  2. Heat olive oil and butter in a large deep skillet over medium-high heat (about 375°F). Add chicken and cook for 4-5 minutes, turning occasionally, until golden brown but not fully cooked through. Remove chicken and set aside.
  3. Lower heat to medium, add minced garlic to the pan, and sauté for about 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a simmer. Add broken pasta pieces, pressing them slightly into the broth to submerge. Cover with a lid and cook for about 10 minutes, stirring occasionally to prevent sticking.
  5. Return the seared chicken to the skillet. Stir gently to combine and cook for another 5-7 minutes uncovered. Add more broth or water if pasta is not tender.
  6. Reduce heat to low. Stir in heavy cream and freshly grated Parmesan cheese. Continue stirring until cheese melts and sauce thickens, about 3-4 minutes. Add extra broth or cream if sauce is too thick.
  7. Taste and adjust salt and pepper as needed. Sprinkle chopped parsley over the top before serving.

Notes

If sauce thickens too quickly before pasta is done, add a splash of water or broth to keep it saucy. Avoid high heat when adding cream and cheese to prevent curdling. Freshly grated Parmesan melts better than pre-grated. For gluten-free, substitute pasta accordingly. For dairy-free, use coconut or cashew cream and nutritional yeast.
