  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup wild rice blend
  • 1 medium onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika (optional)
  • Optional add-ins: 1 cup sliced mushrooms, 1/2 cup frozen peas

Instructions

  1. Finely chop onion, dice carrots and celery, and mince garlic (about 10 minutes).
  2. In a skillet over medium heat, melt butter. Add onion, carrots, and celery; cook 5-7 minutes until softened. Add garlic and cook 1 minute, stirring constantly.
  3. Transfer sautéed vegetables to crockpot. Add wild rice blend, chicken broth, thyme, parsley, smoked paprika (if using), salt, and pepper. Stir to combine.
  4. Place chicken breasts or thighs on top of the mixture without stirring.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender and rice is cooked but slightly chewy.
  6. Remove chicken and shred with two forks. Return shredded chicken to crockpot and stir gently.
  7. Stir in heavy cream and softened cream cheese until fully melted and soup is creamy (about 5 minutes).
  8. If using mushrooms or peas, stir them in now and cook uncovered on HIGH for 15-20 minutes to soften and heat through.
  9. Taste and adjust seasoning with salt, pepper, or herbs as needed.
  10. Serve hot, garnished with fresh parsley or thyme if desired.

Notes

Use softened cream cheese to avoid lumps. Sauté vegetables before adding to crockpot to enhance flavor. Monitor rice texture to avoid mushiness. Add cream and cream cheese at the end to prevent curdling. Adjust broth if soup is too thick or thin.
