Creamy One-Pot Sausage and White Bean Soup

A comforting, creamy soup made with Italian sausage, white beans, and fresh herbs, simmered in one pot for an easy 30-minute meal that requires no heavy cream.

  • 1 pound Italian sausage (mild or hot)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 4 cups vegetable or chicken broth (low-sodium)
  • 1 can (14 oz) crushed tomatoes
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 cups fresh baby spinach
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook for 5 minutes until soft and translucent.
  2. Add minced garlic and cook for 1 minute until fragrant, being careful not to let it brown.
  3. Increase heat to medium-high. Add Italian sausage, breaking it up into small pieces. Cook for 7 minutes until browned and cooked through.
  4. Stir in crushed tomatoes, fresh thyme sprigs, and bay leaf. Simmer for 2 minutes to meld flavors.
  5. Pour in drained white beans and broth. Stir to scrape up browned bits from the bottom. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Remove pot from heat. Using an immersion blender, blend about half of the soup directly in the pot to create a creamy texture. Alternatively, transfer half to a blender, blend until smooth, and return to pot.
  7. Return pot to low heat. Stir in fresh spinach and cook for 2 minutes until wilted.
  8. Taste and adjust seasoning with salt and black pepper. Remove thyme sprigs and bay leaf before serving.

Notes

For a chunkier soup, blend fewer beans. For a smoother soup, blend more. Use low-sodium broth to control salt levels, as sausage and canned beans can be salty. If the soup is too thick, add a splash of water or broth. If too thin, simmer uncovered to reduce. This soup freezes well for up to 3 months.
