  • 1–2 teaspoons honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1 tiny pinch salt
  • 1 medium ripe banana (spotty bananas are best)
  • 2 tablespoons (32g) creamy peanut butter (natural or processed, as preferred)
  • Optional toppings: sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, sprinkle of cinnamon

Instructions

  1. In a mason jar or container, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add the creamy peanut butter to the mashed banana and stir until well combined.
  3. Pour in the milk, Greek yogurt, vanilla extract, and honey or maple syrup. Stir until the peanut butter and banana are fully incorporated into the liquid.
  4. Add the rolled oats, chia seeds, and a tiny pinch of salt. Stir well to ensure everything is evenly distributed, especially the chia seeds.
  5. Seal the jar with a lid and refrigerate for at least 4 hours, but preferably overnight (8-12 hours) for the best texture.
  6. In the morning, stir the oats. If too thick, add a splash of milk; if too thin, add more chia seeds and let sit for 30 minutes.
  7. Add desired toppings (e.g., sliced banana, peanut butter drizzle, chocolate chips, cinnamon) and enjoy cold or microwave for 45-60 seconds for a warm version.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash banana thoroughly to avoid cold chunks. Stir halfway through refrigeration if possible to distribute chia seeds. Oats keep in fridge for up to 5 days; add toppings fresh. For a warm version, microwave for 45-60 seconds.
