Creamy Roasted Cherry Tomato Pasta with Burrata and Basil

A simple and indulgent weeknight dinner featuring whole roasted cherry tomatoes, creamy sauce, burrata cheese, and fresh basil for a flavorful and comforting pasta dish.

  • 1 pint (300g) whole cherry tomatoes
  • 3 tablespoons extra virgin olive oil, divided
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 12 ounces (340g) pasta (spaghetti, linguine, or penne)
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 8 ounces (225g) burrata cheese, torn into pieces
  • A handful of fresh basil leaves, torn or chiffonade

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss whole cherry tomatoes with 2 tablespoons olive oil, a pinch of salt, and freshly ground black pepper. Spread evenly on a rimmed baking sheet.
  3. Roast tomatoes for 20–25 minutes until soft, blistered, and starting to burst.
  4. While tomatoes roast, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (9-11 minutes). Reserve 1 cup (240ml) pasta water and drain pasta.
  5. In a large skillet over medium heat, warm 1 tablespoon olive oil. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden.
  6. Add roasted tomatoes with their juices to the skillet. Gently mash some tomatoes with the back of a spoon, leaving many whole.
  7. Pour in heavy cream and stir to combine. Add grated Parmesan cheese and stir until melted and smooth. Add reserved pasta water a few tablespoons at a time if sauce is too thick.
  8. Add drained pasta to the skillet and toss gently to coat with sauce. Heat through for 1-2 minutes. Adjust seasoning with salt and pepper.
  9. Remove from heat. Tear burrata cheese into chunks and scatter over pasta. Add fresh basil leaves and gently fold to combine.
  10. Serve immediately, optionally drizzling with extra olive oil.

Notes

Reserve pasta water to adjust sauce consistency. Roast cherry tomatoes whole for best flavor. Avoid burning garlic by sautéing on moderate heat. Add burrata off heat or on very low to prevent breaking the cheese. Reheat leftovers gently with added cream or water to loosen sauce.
