These no-bake cheesecake bites feature a buttery graham cracker crust, smooth and tangy cream cheese filling, and festive red, white, and blue fresh fruit toppings, perfect for summer gatherings and holidays.

  • 1 ½ cups graham cracker crumbs (about 1012 full sheets, finely crushed)
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • ½ cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh blueberries, washed and patted dry
  • 1 cup fresh strawberries, hulled and sliced
  • Optional: edible silver star sprinkles or white chocolate shavings

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated and look like wet sand (about 2-3 minutes by hand).
  2. Transfer the crumb mixture into a 9×13 inch dish. Use the back of a spoon or the bottom of a glass to firmly press the mixture into an even layer. Chill in the fridge for at least 15 minutes.
  3. In a large bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy (2-3 minutes with an electric mixer on medium speed).
  4. In a separate chilled bowl, whip the heavy cream and lemon juice until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, folding carefully to keep the mixture light and airy (about 2 minutes).
  6. Spread the creamy filling evenly over the chilled crust in the dish. Smooth the top with a spatula or knife. Chill for at least 3 hours or overnight.
  7. Just before serving, arrange fresh blueberries and sliced strawberries on top in a star-spangled pattern. Optionally, sprinkle edible silver stars or white chocolate shavings over the top.
  8. Cut into small squares or use a cookie cutter for star shapes. Keep refrigerated until ready to serve.

Notes

Soften cream cheese at room temperature for at least 30 minutes before starting. Chill bowl and beaters before whipping cream for best results. Fold whipped cream gently to keep air in the mixture. Press crust firmly but not too hard to avoid toughness. Chill the dessert overnight for best flavor and texture. Add fresh fruit toppings just before serving to prevent soggy crust.
