Ingredients

Scale
  • 6 large croissants, preferably day-old or slightly stale (about 12 oz / 340 g)
  • 8 oz (225 g) cream cheese, softened
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • 2 cups (about 300 g) fresh strawberries, hulled and sliced
  • 2 tablespoons powdered sugar (optional)
  • 1 teaspoon lemon juice
  • 1/4 cup (50 g) brown sugar
  • 1/3 cup (40 g) all-purpose flour (or almond flour for gluten-free)
  • 1/4 cup (57 g) unsalted butter, cold and cubed
  • 1/2 cup (50 g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Cut each croissant into roughly 1.5-inch pieces. Place evenly in the baking dish.
  3. In a bowl, toss sliced strawberries with powdered sugar and lemon juice. Set aside to macerate.
  4. In a large bowl, whisk softened cream cheese until smooth. Add eggs, milk, sugar, vanilla extract, cinnamon, and salt. Whisk until well combined.
  5. Pour half of the custard mixture evenly over the croissants. Sprinkle macerated strawberries over the croissants. Pour remaining custard on top and press gently to soak croissants.
  6. In a small bowl, mix brown sugar, flour, and cold cubed butter with a pastry cutter or fork until crumbly. Stir in nuts if using. Sprinkle topping evenly over the bake.
  7. Bake for 45-50 minutes until the top is golden brown and custard is set. Cover with foil halfway if browning too fast.
  8. Let bake cool for at least 10 minutes before serving. Serve warm with maple syrup, powdered sugar, or whipped cream.

Notes

Use day-old croissants to avoid sogginess. Soften cream cheese fully before mixing. Let bake rest before serving to set custard. If top browns too fast, tent with foil. For dairy-free, use vegan cream cheese and plant-based milk. Frozen strawberries can be used after thawing and draining excess liquid.
