  • Buffalo sauce (e.g., Frank’s RedHot)
  • Ranch or blue cheese dressing (for serving)

Instructions

  1. Wash and cut the cauliflower into uniform, one-inch florets. Pat them dry thoroughly with paper towels to ensure crispiness.
  2. In a small bowl, whisk together cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Place cauliflower florets in a large bowl. Sprinkle the dry mixture over the florets and toss until lightly and evenly coated. If needed, add a tiny splash of water to help the powder stick.
  4. Preheat the air fryer to 400°F (200°C).
  5. Lightly spray the air fryer basket with oil. Arrange the coated florets in a single layer, ensuring they do not overlap.
  6. Air fry for 10-12 minutes, shaking the basket halfway through, until edges are golden brown and crispy. Cook in batches if necessary.
  7. While cauliflower cooks, warm the buffalo sauce in a small saucepan or microwave.
