  • 8 slices thick-cut bacon
  • 2 fresh jalapeños, finely diced (remove seeds for less heat)
  • 1/4 cup finely chopped red onion
  • 1/3 cup finely chopped dill pickles
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 1 teaspoon olive oil
  • Optional: 1 teaspoon fresh lime juice
  • Optional toppings: shredded cheddar cheese, sliced green onions, sour cream

Instructions

  1. Prepare the Jalapeño Relish: Heat 1 teaspoon olive oil in a small skillet over medium heat. Add diced jalapeños and red onion, sauté for 3-4 minutes until softened. Remove from heat and stir in chopped dill pickles, apple cider vinegar, sugar, salt, and pepper. Let cool. Add lime juice if using.
  2. Wrap each hot dog tightly with one slice of thick-cut bacon, securing with toothpicks if needed.
  3. Preheat oven to 400°F (200°C). In a skillet over medium heat, cook bacon-wrapped hot dogs seam side down for 2-3 minutes until bacon starts to crisp. Turn to brown all sides, about 6 minutes total.
  4. Transfer hot dogs to a baking sheet (optionally on a wire rack) and bake for 8-10 minutes until bacon is fully crisp and hot dogs are cooked through.
  5. Place each hot dog in a bun (toasted if desired). Spoon jalapeño relish over the top and add optional toppings like shredded cheddar or green onions.

Notes

Use thick-cut bacon for best results to prevent curling and ensure crispiness. The jalapeño relish can be made ahead and refrigerated for up to 3 days. Adjust heat by removing jalapeño seeds or adding more sugar. For gluten-free, use gluten-free buns or lettuce wraps. To reheat leftovers, bake at 350°F for 5-7 minutes to crisp bacon again.
