Instructions

  1. Marinate the chicken pieces in buttermilk in a large bowl. Cover and refrigerate for at least 2 hours, ideally overnight. If short on time, even 30 minutes helps.
  2. In a separate large bowl, whisk together all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the seasoned flour mixture, pressing firmly to adhere. Place coated pieces on a wire rack and let rest for 10 minutes.
