  • 5 large garlic cloves, minced

  • 2 teaspoons fresh thyme (or 1 teaspoon dried)
  • 1 teaspoon salt (kosher preferred)
  • ½ teaspoon freshly ground black pepper
  • Juice of half a lemon
  • ¼ cup chicken broth (60 ml)
  • Optional: pinch of red pepper flakes
  • Optional: fresh parsley, chopped for garnish

Instructions

  1. Pat the 6 chicken thighs dry with paper towels. Season both sides with 1 teaspoon salt and ½ teaspoon freshly ground black pepper. Let rest at room temperature for about 10 minutes.
  2. In a small bowl, combine 4 tablespoons softened butter, 5 minced garlic cloves, and 2 teaspoons fresh thyme leaves. Mix well and set aside.
  3. Place an oven-safe skillet over medium-high heat and add 2 tablespoons olive oil. Heat until oil shimmers but does not smoke, about 2 minutes.
  4. Carefully place chicken thighs skin-side down into the hot pan. Press gently with tongs to ensure even contact. Sear without moving for 7-8 minutes until skin is deep golden brown and crispy.
  5. Flip the chicken thighs and dollop the garlic butter mixture evenly across the tops. Let it melt and bubble, infusing the chicken. Cook for an additional 2 minutes on the stovetop.
  6. Pour ¼ cup chicken broth and juice of half a lemon into the skillet around the chicken, avoiding washing off the garlic butter.
  7. Transfer the skillet to a preheated oven at 400°F (200°C). Bake for 12-15 minutes, or until internal temperature reaches 165°F (74°C).
  8. Remove from oven and let chicken rest in the pan for 5 minutes. Spoon pan sauce over the top and garnish with chopped parsley or extra thyme if desired.
