  • 3 cloves fresh garlic, minced
  • 1 tablespoon olive oil (extra virgin preferred)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh chopped)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh chopped)
  • 1 teaspoon dried parsley (or 1 tablespoon fresh chopped)
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels, especially the skin (about 5 minutes).
  2. In a mixing bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, salt, pepper, and lemon zest if using. Stir until well mixed.
  3. Add the chicken thighs to the bowl and toss gently but thoroughly to coat all sides, including under the skin when possible.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange the chicken thighs skin-side up in the air fryer basket, making sure they are not touching to avoid steaming.
  6. Cook the chicken thighs for 12 minutes undisturbed.
  7. Flip each thigh skin-side down using tongs and cook for another 12 minutes until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken thighs and let them rest for 5 minutes before serving.
