  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • A pinch of cayenne pepper
  • 1 egg mixed with 1 tbsp water (for egg wash)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining flour until the dough pulls away from the sides.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  5. While dough rises, bring 10 cups of water to a boil in a large saucepan. Add baking soda and reduce to a simmer.
  6. Punch down risen dough. Divide into 12 equal pieces. Roll each into an 18-inch rope and shape into pretzels. Place on parchment-lined baking sheets.
  7. Working in batches, boil pretzels in the baking soda water for 30 seconds on each side. Remove with a slotted spoon and place back on the baking sheet.
  8. Let pretzels rest for 10 minutes while preheating oven to 425°F (220°C).
  9. Brush pretzels with egg wash and sprinkle generously with coarse sea salt. Bake for 12-15 minutes until deeply golden brown.
  10. While pretzels bake, melt 4 tablespoons butter in a saucepan over medium heat. Whisk in ¼ cup flour to make a roux, cooking for 1 minute.

  12. Remove sauce from heat and stir in grated cheese, mustard, garlic powder, and cayenne until smooth.
