  • 3 stalks green onions, thinly sliced
  • 12 jalapeños, thinly sliced
  • ½ cup (120ml) sour cream
  • 1 medium fresh tomato, diced (optional)
  • ⅓ cup (50g) black olives, sliced (optional)
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • Olive oil spray or vegetable oil for crisping fries

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Spread the frozen fries evenly on the baking sheet. If using a wire rack, place it on the sheet and distribute fries on top to allow air circulation.
  3. Lightly spray or drizzle olive oil over the fries, then sprinkle with salt, pepper, and smoked paprika. Toss gently to coat.
  4. Bake the fries for 20-25 minutes, flipping or shaking halfway through for even browning. Fries should be golden and crispy.
  5. While fries bake, prepare toppings: cook bacon until crispy and crumble it; slice green onions, jalapeños, dice tomatoes, and slice olives; grate the cheese blend fresh.
  6. Once fries are crispy, remove from oven and evenly sprinkle shredded cheddar and mozzarella cheeses on top. Add bacon bits, jalapeño slices, and olives.
  7. Return to the oven for 5-7 minutes until cheese is fully melted and bubbly.
  8. Remove loaded fries from oven and top with fresh green onions, diced tomatoes, and dollops of sour cream.
  9. Serve immediately for best texture and flavor.
