  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup smoky, tangy BBQ sauce
  • 2 green onions, thinly sliced
  • ½ cup sour cream (optional, for serving)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes thoroughly. Poke each potato a few times with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-50 minutes until tender and skins are crisp.
  4. Once cool enough to handle, slice each potato in half lengthwise and scoop out most of the flesh, leaving about ¼-inch thickness.
  5. Brush the potato skins lightly with olive oil on both sides. Place skin-side down on a baking sheet and season with salt and pepper.
  6. Bake the potato skins for 10-12 minutes until crisp and golden.
  7. Mix the pulled pork with half of the BBQ sauce and warm gently.
  8. Remove skins from oven and flip skin-side up. Spoon pulled pork mixture evenly into each skin.
  9. Sprinkle shredded cheddar cheese generously over the pulled pork.
  10. Bake loaded skins for another 8-10 minutes until cheese melts and bubbles.
  11. Garnish with sliced green onions and serve with sour cream and extra BBQ sauce on the side.

For extra crispy skins, broil for 1-2 minutes at the end but watch closely to avoid burning. If pulled pork is very moist, pat dry slightly before mixing with BBQ sauce.
