  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 1 tablespoon unsalted butter, melted
  • 1/4 cup pure maple syrup
  • 1 cup raw pecan halves
  • Optional: Fresh thyme leaves or chili flakes

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or leave bare for maximum crispiness.
  2. Place the cut sweet potatoes in a large mixing bowl. Sprinkle with cornstarch, olive oil, salt, pepper, cinnamon, and paprika. Toss until every piece is evenly coated and looks slightly dusty.
  3. Spread the potatoes in a single layer on the baking sheet, ensuring they are not touching to prevent steaming.
  4. Roast for 20 minutes until edges begin to turn golden.
  5. While potatoes roast, melt butter and maple syrup together in a small saucepan or microwave. Toast pecans in a dry pan for 2-3 minutes until fragrant.
  6. Remove pan from oven. Drizzle half of the maple glaze over the potatoes and toss gently. Sprinkle half of the toasted pecans over the top.
  7. Return to oven and roast for another 15-20 minutes until edges are dark brown and crispy.
  8. Remove from oven, drizzle with remaining glaze, and sprinkle with remaining pecans. Let cool for 5 minutes before serving.

Notes

Do not overcrowd the pan; potatoes must be in a single layer to crisp up. Use 100% pure maple syrup, not pancake syrup. Cornstarch is essential for achieving a crispy exterior. Toast pecans separately to ensure they remain crunchy. If using frozen sweet potatoes, thaw completely and pat very dry.
