This recipe delivers crispy, garlicky, cheesy chicken thighs with a crunchy Parmesan crust, baked in the oven for a healthier alternative to frying. Perfect for quick, flavorful weeknight dinners.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 grams)
  • 3 cloves garlic, finely minced
  • ½ cup (50 grams) finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • ¾ cup (about 60 grams) panko breadcrumbs (substitute gluten-free if needed)
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 teaspoon dried Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top if available.
  2. Pat the chicken thighs dry thoroughly with paper towels to ensure crispiness.
  3. In a medium bowl, combine minced garlic, grated Parmesan, panko breadcrumbs, Italian seasoning, salt, pepper, and red pepper flakes if using. Mix well.
  4. Brush the chicken thighs lightly with about 2 tablespoons of olive oil using a silicone brush.
  5. Press the breadcrumb mixture firmly onto the skin side of each chicken thigh to form a crust.
  6. Place the coated chicken thighs skin-side up on the wire rack or directly on the baking sheet, spacing them out for air circulation.
  7. Bake for 30-35 minutes until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C). Use a meat thermometer to check doneness.
  8. Remove from oven and let rest for 5 minutes before serving to lock in juices.

Notes

Pat chicken skin dry thoroughly for best crust adhesion and crispiness. Use bone-in, skin-on thighs for juicier meat and better texture. If crust browns too fast, tent loosely with foil for last 5-10 minutes. Optionally broil for last 2 minutes for extra crunch but watch carefully to avoid burning. Leftovers reheat best in oven at 375°F for 10 minutes to maintain crispiness. Variations include adding lemon zest, smoked paprika, or fresh herbs to the crust. For dairy-free, substitute Parmesan with nutritional yeast and use dairy-free breadcrumbs. For gluten-free, use gluten-free panko or crushed crackers.
