  • 2 tablespoons unsalted butter

  • 1 1/2 cups whole milk (room temperature)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup cooked and seasoned ground beef or shredded chicken (optional)
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • Sour cream and guacamole, for serving

Instructions

  1. Preheat your oven to 400°F (205°C). Line your baking sheet with parchment paper or lightly grease it.
  2. Toss the tortilla chips with olive oil, smoked paprika, and chili powder in a large bowl until evenly coated.
  3. Spread the chips in a single layer on the sheet pan. Roast for about 8-10 minutes until the chips are golden and extra crispy. Watch closely so they don’t burn.
  4. While the chips roast, melt the butter in a medium saucepan over medium heat.
  5. Once melted and bubbling, whisk in the flour and cook for 1-2 minutes, stirring constantly to form a roux.
  6. Slowly pour in the milk, whisking constantly to avoid lumps. Bring to a gentle simmer and cook for 4-5 minutes until thickened.
  7. Remove from heat and stir in the shredded cheddar, Monterey Jack, and mozzarella cheeses until smooth.
  8. Add garlic powder, salt, and black pepper to taste. If the sauce feels too thick, whisk in a splash more milk.
  9. Remove the crispy chips from the oven. Drizzle the warm three-cheese sauce evenly over the chips.
  10. Scatter the cooked ground beef or shredded chicken (if using) across the top, then add jalapeños, diced tomatoes, and green onions.
  11. Pop the sheet pan back into the oven for another 5-7 minutes just to heat through and meld the flavors.
  12. Once out of the oven, sprinkle chopped cilantro over the nachos.
  13. Serve immediately with dollops of sour cream and guacamole on the side for dipping.

To keep chips crispy, add wet toppings like sour cream or guacamole just before serving. Use sturdy chips to prevent sogginess. Shred your own cheese for a creamier sauce. For gluten-free, substitute flour with gluten-free flour or cornstarch. Vegan versions can use plant-based milks and cheeses.
