  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 kiwi, peeled and thinly sliced
  • 1 small banana, sliced (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pizza pan or springform pan with butter or non-stick spray.
  2. In a large bowl, whisk together melted butter and granulated sugar until combined and glossy. Add cocoa powder and mix well.
  3. Beat in eggs one at a time, then add vanilla extract. Gently fold in flour and salt until just combined; do not overmix.
  4. Pour batter into prepared pan and spread evenly. Bake for 25-28 minutes until edges are set and a toothpick comes out with moist crumbs. Cool completely on a wire rack (about 1 hour).
  5. Melt chopped chocolate gently in microwave-safe bowl in 20-second intervals, stirring until smooth.
  6. In a separate bowl, beat mascarpone, powdered sugar, and vanilla extract until creamy. Gradually add melted chocolate and mix until fully incorporated. Chill if too soft.
  7. Spread chocolate mascarpone frosting evenly over cooled brownie base.
  8. Arrange sliced fruit artistically on top and garnish with mint leaves if desired.
  9. Refrigerate assembled fruit pizza for at least 30 minutes to set frosting and meld flavors.
  10. Slice into wedges with a sharp serrated knife and serve chilled or at room temperature.
