This quick and creamy buffalo chicken dip comes together in just 10 minutes with simple ingredients. Perfect for game day, weeknights, or any gathering, it’s a crowd-pleaser that delivers bold flavor without the fuss.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 2 cups cooked chicken, shredded or diced
  • ½ cup buffalo wing sauce (e.g., Frank’s RedHot)
  • ½ cup ranch dressing
  • ½ cup shredded cheddar cheese, plus more for topping
  • Optional: sliced green onions, crumbled blue cheese, or chopped celery leaves for garnish

Instructions

  1. Soften the cream cheese: Place the cream cheese in a medium microwave-safe bowl. Microwave on high for 20-30 seconds until soft but not melted. Stir until creamy and smooth.
  2. Shred the chicken: If using rotisserie chicken, pull the meat off the bones and shred with two forks into small, bite-sized pieces. If using leftover chicken, dice into small cubes.
  3. Mix the base: Add the buffalo sauce and ranch dressing to the softened cream cheese. Stir until well combined and smooth.
  4. Fold in the chicken and cheddar: Add the shredded chicken and ½ cup of shredded cheddar cheese. Fold together until the chicken is evenly coated.
  5. Transfer to baking dish: Spoon the mixture into a 9-inch pie plate or 1-quart baking dish. Spread evenly and sprinkle remaining cheddar cheese on top.
  6. Bake or microwave: For the oven, bake at 375°F for 15-20 minutes until bubbly and golden. For the microwave, heat on high for 2-3 minutes, stirring halfway through, until hot and melted.
  7. Garnish and serve: Sprinkle sliced green onions or crumbled blue cheese on top if desired. Serve immediately with chips, celery sticks, or toasted baguette slices.

Notes

Soften cream cheese for 20-30 seconds in the microwave to avoid lumps. The dip will thicken as it cools; let it sit for 2-3 minutes after microwaving. For a milder version, use mild buffalo sauce and add extra ranch dressing. For extra heat, use hot buffalo sauce and add cayenne pepper. Can be assembled up to 24 hours in advance and refrigerated; add 5 minutes to baking time if cooking from cold.
