A quick and easy appetizer made with ripe tomatoes, fresh basil, and garlic-rubbed crostini. Perfect for last-minute gatherings or a light summer snack.

  • 4 ripe Roma tomatoes, diced (about 2 cups)
  • 23 cloves fresh garlic, minced
  • 810 fresh basil leaves, chiffonade
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 baguette (day-old preferred)
  • 2 tablespoons olive oil (for brushing bread)
  • 1 whole garlic clove, peeled (for rubbing)

Instructions

  1. Preheat broiler to high with rack about 6 inches from heating element.
  2. Slice baguette into ½-inch thick diagonal slices (about 20-24 slices).
  3. Arrange bread slices on a baking sheet and brush tops lightly with olive oil.
  4. Toast under broiler for 1-2 minutes until edges are golden brown. Flip and toast other side for 30-60 seconds.
  5. Immediately rub each hot toast slice with the peeled garlic clove.
  6. Dice Roma tomatoes into ¼-inch cubes and place in a mixing bowl.
  7. Add minced garlic, basil, olive oil, balsamic vinegar, salt, and pepper to the bowl. Stir gently to combine.
  8. Let tomato mixture sit for 2-3 minutes to allow flavors to meld.
  9. Taste and adjust seasoning as needed.
  10. Spoon tomato mixture onto crostini just before serving. Serve immediately.

Notes

For best results, let the tomato mixture sit for a few minutes after adding salt to draw out juices. Rub the toasted bread with garlic while still hot for maximum flavor. Assemble just before serving to prevent soggy bread.
